The varied weather elicits both distinctive aromas and delicious flavors from the distillate. Every single ingredient comes from the surrounding area and is sourced no more than an hour's drive away. Solera is a traditional method Spaniards use to age their sherry and keep it consistent. A fraction of each young barrel is blended with more mature spirit. It's the inspiration for the Solera single malt. And it means that in every bottle made today, there is still a hint of one of Starward's first casks. Apera casks from the McWilliams winery are used for aging; Apera is an Australian fortified wine, similar to sherry.
