Fifty Pounds Gin is produced in a small and legendary distillery located in South East London, with a tradition of more than two centuries. The production method is, still today, carried out in a still manufactured by the legendary John Dore which, through a perfect combination of herbs, spices, fruits and flowers, together with the mixture with a grain with neutral alcohol, previously distilled four times, manages to reach a greater purity. The distiller makes use of the process used for centuries, known as "Batch Process" distillation, which is the purest way to obtain "the best gin". This is a delicate and laborious process, which involves the Distiller discarding the 'heads' and 'tails' of the distillate, selecting only the 'heart' at the exact moment when the flavor and alcohol content are perfect. Then drink is filtered three times, reducing impurities to achieve optimal smoothness. The resulting distillate is left to "rest" for at least three weeks, thus allowing the essential oils to blend perfectly with the grain. The final step in making this precious gin is to balance the distillate obtained together with demineralized water, to achieve the perfect balance and alcohol content. In the end, the gin has an alcohol content of 43.5% - the ideal percentage to drink neat, with tonic, or in a dry martini. If it has a higher alcohol content, it runs the risk of distorting the combinations. Only in this way can Fifty Pounds gin achieve its unique and complex personality.
