Vineyard: clay soils from Ribera del Duero (our vineyards from San Juan del Monte)
Maceration: cold maceration for 4 days at 8ºC.
Alcoholic Fermentation: for 7 days at 22ºC with autochthonous yeasts
Malolactic Fermentation: in stainless steel tank.
Ageing: 3 months in American (40%) and French (60%) oak barrels. Gastronomy: Recommended with red meats on the barbecue and roasts.
