This is our company's medium red wine. It is a remarkable presence wine, round and full-bodied, produced from perfectly ripe grapes and from small productive loads, it reproduces the typicalness of its terroir. Vineyards and grapes: Thirty years old vines and partly more recent vineyards; Sangiovese, Merlot and Marzemino, with small amount of Barbera and very small percentage of Pinot noir and Cabernet. Crop thinnig to reduce the load and to make it proportionate to the vine's capacity to fully ripen fruit. Harvest: harvest at full ripeness stage, with periodic wine tasting to evaluate the grapes' phenolic rieness. Vinification: At least two weeks long maceration, at temperature deliberately variable in a programmed way,to extract the best chemicals of the skins and preserve the fragrances, so to give prominence to the olfactory components of all the present varieties. Long ageing on fine lees exclusively in steel containers, bottling after at least 12 months, in full respect for the integrity of the wine, without forcing its stabilisation or its filtartion, and additional ageing in bottle for a few months. Organoleptic proprieties: full ruby red colour, rich, full-bondied aroma with good intensity, at tasting is of medium texture; excellent balance and elegance, not excessive nor intrusive, with moderate astringency and appropriate acidic level, to guarantee the appropriate gustative freshness. Preservation: ideal consumption period is between 14 month and 3-5 yearsafter the harvest. Keep in a cool and dark place. Serving and Matching: Serve at 18/20�. Texture is good but rich of chemicals of the grapesof origin, wich makes it of good complexity and of natural roundness deriving from the ideal stage of ripeness and not oenological forcing. It can be paired with a lot of meat dishes, also the elaborate, savory and spiced ones, and with medium ageing cheese.
