The Sparviere Franciacorta Cuvee 7 Brut White sparkling wine brut classic method Classification DOCG Franciacorta Brut Vines 100% Chardonnay Location Slightly sloping south-west, in the municipality of Provaglio d'Iseo, 200 meters above sea level Soil composition The calcareous soil is clayey and silty with a red color. Yield per hectare 80 q harvest Manual with strict selection of grapes in the vineyard. Harvesting period: between the last ten days of August and the first of September. Fermentation temperature 16 � C winemaking From the vineyard the chardonnay boxes are placed in a cold room for one night. The whole bunches are then squeezed with a yield of 60%. The must flower rests for 24 hours at low temperature, favoring a natural clarification and a lysis of the varietal aromas. Fermentation is carried out slowly at 16 � C to retain all the perfumes. It is the last born at Lo Sparviere, from Chardonnay grapes combines the rigor and minerality of calcareous-clay soils with floral exuberance and the softness of morainic soils. It has a fruity and savory taste, capable of being immediately appreciated. Annual production about 60,000 bottles, minimum aging on the lees 30 months. Refinement The maturation of the base wine on the yeasts lasts about 7 months in stainless steel tanks and the draft for the froth takes place in the month of May.
