Producer: The Benedictine Archabbey of Pannonhalma has been making wines on the Sacred Mount of Pannonhalma since 996AD when Roman settlers first introduced viticulture/viniculture. The Abbey & it's stunning natural environment, surrounded by vineyards and herb gardens, is a World Heritage Unesco site. In 2000 in partnership with MKB Bank the winery was rebuilt with state of the art technology within the mountain. Think Harry Potter meets James Bond.
Farming: Grapes picked by hand, sustainable.
Winemaking: ripe grapes of the different varieties were harvested separately. After being destemmed, the grapes were cold-macerated in 60 hl chilled stainless-steel tanks and then fermented under controlled conditions. Aged for 8 months in used Hungarian wooden barrels. During that time, the malo-lactic fermentation has been completed.Vegetarian.
