The Chiarli Lambrusco di Sorbara DOC comes of course from the Emilia Romagna Region and is made by the oldest producer of Lambrusco and
wines from Emilia Romagna. Through the strictest selection of the best grapes, Chiarli has made a name for itself in the field of Lanbrusco wines and Chiarli guarantees quality for a wide range of prestigious wines from Emilia-Romagna. The Lambrusco di Sorbara is a dry wine with a beautiful light pink color and balanced body; pale pink and very fine foam, thanks to the long natural fermentation and all this with a very modest alcohol content of 10.5% vol.
After picking the best grapes, the grapes are traditionally pressed with a maceration of 36 hours at 10°-12°C. The juice is then drained and cooled to retain the fruit as best as possible. All this is done at a low temperature and ensures a slow fermentation and thus one is able to gradually collect the mousse in a closed vessel (methode Charmat (2nd fermentation in tank)
