The Voladeros Mountain Wine is the first pedro ximenez dry white wine produced in Malaga since the end of the nineteenth century. What many do not know was that the dry white wine made from Pedrox Ximenez from before the 19th century was the most famous wine in Malaga and the surrounding area.
In 1786, Rev. Townsend through the area and he was the first to describe this Mountain wine. From that moment on the 'Pedro Ximenez' or Ximen 'wine brought a lot of prosperity to Malaga and was a well-known (refined) white dry wine (source: García de la Lena, 1789).
The Pedro Ximenz grape has mainly become a sherry grape after the 19th and the (very old) mountain vineyards have been forgotten and there are only one vineyard left. Victoria Ordoñez born and raised in Malaga is no stranger to the wine world and she went looking in the mountains of Malaga for lost and authentic vineyards (of both the Moscatel and the Ximenez vineyards) and started in 2015 to make this authentic grapes to make (fantastic) wines again and these are wines that need to be monitored. They are currently in many a Michelin restaurant. The only problem is that only a very limited number of bottles are made because the vineyards are very small.
Restoring the production of the famous "Mountain wine" with the very delicate Pedro Ximenez grapes in Malaga is what Viictoria started with a lot of passion and already with the first volume in 2015 this is a huge success. The wines of Ordonez are already within 1 year in a number of very famous Michelin restaurants so keep an eye on the wines.
The vineyards are hidden between 60 and 100 years old in a Mediterranean forest of holm oaks, cork oaks and Aleppo pines. The vineyards are situated at an altitude between 800 and 1000 m with very steep slopes varying between 46 and 76%, so here can only be cultivated on the basis of old winemaking techniques, there is no machine to adapt and there is for transport from the grapes from the vineyard to the foot of the mountain mules used. The yields are very low (900 kg / ha) and the concentration of the grapes is optimal.
The harvest is carried out manually in boxes of 9 kg. With the help of mules the grapes are collected at the foot of the vineyard and go directly into a refrigerated transport. The grapes are harvested very early and then it is still (very) cold in the vineyards in the mountains and this way the grape retains its freshness and spontaneous fermentation is prevented. The first selection is made in the vineyard and in the bodega the second selection takes place on the selection table. The Voladeros is obtained from the free-run juice. It is fermented at a controlled temperature in 500 and 600 liters of French oak barrels. It ripens on its yeast, The wine was bottled in August 2018 and has therefore been allowed to mature for a total of 14 months (10 months in the barrel and 4 months in the bottle).
The Voladeros is an unprecedentedly beautiful delicate dry white wine. The wine has a beautiful acidity and is very complex because with every gulp you taste various layers of fruit. The aftertaste is great and lingers in the palate for a long time. Nice white fruit, nicely integrated fruit and a perfect acidity with a nice bitterness in the aftertaste. We advise you not to drink this delicate wine too cold (around 12 degrees)
