Dominio Dostares has very old vineyards in the beautiful Bierzo. The latest technology, long history and boundless passion are the building blocks of Dominio de Tares (nb - Dostares is part of Dominio de Tares) The vineyards, part of which is more than 100 years old, are located in the highly regarded wine-growing region of El Bierzo all the Burgundy of Spain. Each area of the vineyard has a separate vinification to achieve the optimum expression of the grape. The estate, whose name is a nod to Dominio de Tares, produces very aromatic wines with a fine acidity that have a lot of depth. Their name is established by the worldwide recognition by renowned wine journalists.
The Mencia, Godello and Prieto Picudo are the authentic grapes and this is used to make great wines. It is certainly advisable to drink a Preito or Mencia instead of a pinot noir or to drink a nice Godello instead of the many dusty Chardonnay. Price / quality in both cases is better. The soil consists of a sandy loam soil with gravel and is located on a plateau 810 meters above sea level.
The Estay by Dominio Dostares is a 100% Prieto Picudo. The grapes are picked by hand with 1st selection in the vineyard and 2nd in the winery on the selectii table. Only the beautiful fruit is selected and the rest is sold. After selection, macération pellicular of 24 hours takes place at a temperature of 12 ° C. The alcoholic fermentation takes 25 days at a temperature of 25 ° C and malolactic fermentation is used. The raising of the wine is done in barriques of 225 liters made of French, Hungarian and American oak during 6 months. The wine is then bottled.
The Estay is deep dark garnet red in the glass. In the nose we smell nice and fresh notes of ripe red fruit, a little leather, clove notes of fine oak (brioche, cedar wood). The taste is round, fresh and perfectly balanced with friendly tannins. The aftertaste of the Estay is elegant. The Estay is a great wine to just enjoy.
