The Ravera is a new wine from winery Paolo Scavino! Given the great other Barolos from this winery, and the equally favorable reviews, this Barolo will not be inferior. The nebbiolo grapes come from the eponymous (Ravera) vineyard from the village of Novello. This vineyard is located in the southwest of the Barolo area and has an eastern exposure. The vineyard is located at an altitude of about 430 meters (the highest vineyard in the winery) and was planted in 1999, 2000, 2002, 2004 and 2005. Due to its height and exposure, it is quite cool in this vineyard. The soil is fairly loose and consists mainly of whitish marl (limestone, Marne di Sant'Agata fossils). The combination of coolness, exposure and height contribute to a long cycle of ripening of the nebbiolo grapes. This vineyard is the last to be harvested and the high acidity of this Ravera is a very positive factor for the long and beautiful aging of this Barolo.

The grapes are harvested by hand in the second part of October and then stalked and gently crushed. Maceration and alcoholic fermentation in stainless steel at a controlled temperature with the naturally occurring yeasts. Malolactic conversion into 225 L barrels during the winter follows. Aging: 10 months in neutral French oak barrels and then 12 months in large barrels. Finally 10 months in stainless steel followed by 10 months bottle aging.

This Barolo Ravera is brilliant ruby to garnet red in color with on the nose aromas of rosehip, violet, ash, tobacco, white peaches, red cherries and a hint of balsamic vinegar and mint. In the mouth resolute, full of energy and finesse. The acidity is fairly sharp, the tannins have a nice tension and yet they are harmonious in the structure.

Our advice: leave this wine alone for a few years and then enjoy this wonderful barolo even more.

The wine goes well with red meat (grilled / roasted), lamb, and game dishes.
