Amarone Classico della Valpolicella by Zyme is a beautiful and elegant Amarone. Intense ruby red, glycerin-rich, tending towards garnet with ageing, it expresses the notes of ripe cherry and morello cherry, semi-dried plum, and spices. On the palate Amarone Classico Zyme enters with appealing savouriness, mirroring the fragrances on the nose and adding fruit preserves; with ageing, the palate lengthens, off paring delicate impressions of pepper, black liquorice and cocoa powder. Ideal food pairing include roasts and boiled meats, aged cheeses such as Parmigiano Reggiano or Grana Padano. Enjoyed on its own or at meals end, it is superb.
