Grapes: Merlot (60%), Cabernet Sauvignon (30%), Petit Verdot (5%), Syrah (5%).
2019 bottle: characterised by highly variable climatic conditions. The low spring temperatures led to a delay in budding, whilst the warm summer temperatures of summer and well-distributed rainfall allowed a long and balanced ripening of the grapes. It turned out to be the latest harvest in the last ten years.
Technique: Harvested by hand into 15kg crates, separated by variety and plot. A careful selection of the grapes preceded destemming, followed by the maceration phase in stainless steel vats at a controlled temperature. In this phase, alcoholic fermentation began, which lasted for about two weeks. The last parts of the process are racking and malolactic fermentation. After 16 months in oval barriques, the wine was refined for a final 6 months in the bottle.
Serving Temperature: 15-16°C.
