It comes from a blend of Montepulciano, Syrah and Cesanese and ages for one year in wood, filling the glass with a dark but bright ruby red mantle. The olfactory picture is rich and engaging, in fact you can perceive aromas of red fruit in alcohol and jam, balsamic notes and spices. Excellent nose-mouth correspondence for an enveloping, soft and well-structured taste
Its particular characteristics make it perfect to combine with tasty meat dishes such as mixed grills, roast game or typical Roman cuisine such as oxtail.
Vineyards of origin Various municipalities in the DOC Roma area.
Grapes of origin Montepulciano, Syrah and Cesanese in the percentages provided for by the specification.
Training system Espalier with spurred cordon. Soil Soils of volcanic origin, pozzolanic and sandy, located in hilly areas that are affected by the influence of sea winds.
Vinification and aging Maceration and fermentation of the individual varieties at a controlled temperature until the end of the same, subsequent racking and soft pressing of the marc. This is followed by a period of aging in woods of various origins and capacities for a period of about a year before bottling and placing on the market.
Sensory analysis
Dark and bright ruby red, with great consistency. Very intense and complex nose of ripe red fruit, cherries in alcohol, then spiced with mace, cardamom, cinchona and black pepper, and more Mediterranean scrub, red flowers, all enclosed by pleasant balsamic notes. Soft and structured sip, with fine, balanced, elegant and very pleasant tannins, with fruity and spicy returns and an almost interminable persistence.
Alcoholic title By 13% to 14%.
Service temperature 16/18° C.
Pairings Pasta dishes with game ragout, grilled red meats, furred and feathered game, medium-aged cheeses, and traditional cuisine (bucatini all'amatriciana, coda alla vaccinara).
